Peach Pan Brioche Donut
17/11/2023The peach pan brioche donut is a soft and fragrant leavened sweet, perfect for breakfast or a snack. Here I present a classic version that could be Italianized by using, for example, fresh Italian peaches when in season, or an Italian liqueur to flavor the dough.
Ingredients
- 500g of manitoba flour
- 150ml of warm milk
- 100g of sugar
- 100g of soft butter
- 2 medium eggs
- 1 packet of dried brewer’s yeast (7g) or 15g of fresh brewer’s yeast
- Grated zest of 1 untreated lemon
- 1 teaspoon of vanilla essence or the seeds of a vanilla bean
- 1 pinch of salt
- Canned peaches to taste or fresh peaches when in season
- Powdered sugar to sprinkle, optional
Preparation
- In a bowl, dissolve the yeast in the warm milk with a teaspoon of sugar.
- In another large bowl, mix the flour with the remaining sugar, lemon zest, vanilla, and pinch of salt.
- Add the eggs to the center of the flour mixture and start kneading, then pour in the milk with the yeast.
- When the dough begins to absorb the liquids, add the soft butter in pieces and continue to knead until you have a smooth and homogeneous mass.
- Cover the dough with a damp cloth and let it rise in a warm place away from drafts for about 2 hours, or until it has doubled in volume.
- Meanwhile, cut the syrupy peaches into slices or, if using fresh ones, slice them and let them drain their juice.
- Take the risen dough and gently incorporate the peach slices.
- Transfer the dough to a previously buttered and floured donut mold, and let rise again for about 30 minutes.
- Bake in a preheated oven at 180°C for 35-40 minutes or until the donut is well golden and a toothpick inserted in the center comes out clean.
- Allow cooling before unmolding the pan brioche donut, and if you like, sprinkle with powdered sugar before serving.
