Peach and Yogurt Jellies

Here is a simple and tasty recipe to prepare peach and yogurt jellies. It’s a fresh and light dessert, perfect to conclude a meal or for an afternoon snack.

Ingredients

  • 3 ripe peaches
  • 500 grams of Greek yogurt or other yogurt of your choice
  • 100 grams of sugar (or to taste, depending on the sweetness of the peaches)
  • 7 grams of gelatin sheets or agar-agar (as a vegetable alternative)
  • Juice of 1/2 lemon
  • Water as needed (the necessary amount to soften the gelatin)

Preparation

  1. Start by soaking the gelatin sheets in cold water for about 10 minutes until they become soft. If you are using agar-agar, follow the instructions on the package for proper use.
  2. Meanwhile, wash and peel the peaches, removing the pits. Cut them into pieces and place them in a saucepan with the sugar and lemon juice.
  3. Cook over medium heat until the peaches have softened and released their juice. Blend everything with an immersion blender to obtain a smooth puree.
  4. Squeeze out the softened gelatin (or prepare the agar-agar) and add it to the still warm peach puree. Mix well to ensure it dissolves completely.
  5. Let the mixture cool to room temperature, then incorporate the yogurt by mixing gently so as not to deflate it.
  6. Divide the mixture into cups or molds of your choice and refrigerate for at least 2-3 hours, until the gelatin has set well.
  7. Serve the peach and yogurt jellies cold. You can decorate with slices of fresh peach or a spoonful of peach jam on top for an extra touch of sweetness.
