Peach and Yogurt Jellies
17/11/2023Here is a simple and tasty recipe to prepare peach and yogurt jellies. It’s a fresh and light dessert, perfect to conclude a meal or for an afternoon snack.
Ingredients
- 3 ripe peaches
- 500 grams of Greek yogurt or other yogurt of your choice
- 100 grams of sugar (or to taste, depending on the sweetness of the peaches)
- 7 grams of gelatin sheets or agar-agar (as a vegetable alternative)
- Juice of 1/2 lemon
- Water as needed (the necessary amount to soften the gelatin)
Preparation
- Start by soaking the gelatin sheets in cold water for about 10 minutes until they become soft. If you are using agar-agar, follow the instructions on the package for proper use.
- Meanwhile, wash and peel the peaches, removing the pits. Cut them into pieces and place them in a saucepan with the sugar and lemon juice.
- Cook over medium heat until the peaches have softened and released their juice. Blend everything with an immersion blender to obtain a smooth puree.
- Squeeze out the softened gelatin (or prepare the agar-agar) and add it to the still warm peach puree. Mix well to ensure it dissolves completely.
- Let the mixture cool to room temperature, then incorporate the yogurt by mixing gently so as not to deflate it.
- Divide the mixture into cups or molds of your choice and refrigerate for at least 2-3 hours, until the gelatin has set well.
- Serve the peach and yogurt jellies cold. You can decorate with slices of fresh peach or a spoonful of peach jam on top for an extra touch of sweetness.
