Peach and Yogurt Popsicles

Peach and yogurt popsicles are a delicious and refreshing option for warm summer days. Here’s how to make them:

Ingredients

  • 2 ripe peaches, preferably organic
  • 250 g of Greek yogurt or another thick and creamy yogurt of your choice (you can also use coconut yogurt for a vegan version)
  • 2 tablespoons of honey or maple syrup (optional, for sweetening)
  • Juice of half a lemon
  • A pinch of extracted vanilla or vanilla powder (optional)

Preparation

  1. Wash and cut the peaches, removing the pit. For best results, you can peel the peaches if you prefer to avoid the skin in the popsicles.
  2. In a blender, put the chopped peaches, the sweetener if desired, the lemon juice, and the vanilla if you wish to add it. Blend until you get a smooth mixture.
  3. If you want your popsicles to have bits of fruit, set aside some peach cubes before blending and add them in later.
  4. Mix the peach puree with the yogurt until well combined. If you prefer distinct layers of fruit and yogurt, you can skip this step and alternatively pour a tablespoon of yogurt and a tablespoon of peach puree into the popsicle molds.
  5. Pour the mixture into the popsicle molds, insert the sticks, and freeze for at least 4 hours or until the popsicles are completely solid.
  6. To remove the popsicles from the molds, run them under warm water for a few seconds to help release them easily.

Fun Fact

In Italy, artisanal popsicles are known as “gelati su stecco” and are very popular in ice cream parlors, especially those focusing on natural production. Sometimes they are also called “stecchi frutta” highlighting the use of fresh seasonal fruit.
