Peach and Chocolate Cake
17/11/2023The Peach and Chocolate Cake is a delicious merging of the sweetness of sun-ripened peaches and the intensity of chocolate. Here is the recipe:
Ingredients
- 200 g of all-purpose flour
- 100 g of sugar
- 100 g of room temperature butter
- 3 eggs
- 1 sachet of baking powder
- 1 pinch of salt
- 2 ripe peaches
- 100 g of dark chocolate
- Icing sugar for decoration (optional)
Preparation
- Preheat the oven to 180 °C (350 °F) and butter and flour a cake pan approximately 24 cm in diameter.
- Slice the peaches thinly after washing and peeling them.
- Melt the chocolate in a double boiler or in the microwave and let it cool down a bit.
- In a large bowl, mix the soft butter with the sugar until you obtain a homogeneous and foamy mixture.
- Add the eggs, one at a time, mixing well after each addition.
- Incorporate the sifted flour with the baking powder and a pinch of salt, mixing gently to prevent lumps.
- Add the melted chocolate to the mixture and stir until you get a uniform batter.
- Pour the batter into the prepared pan and level it with a spatula.
- Arrange the peach slices on the surface of the batter, pressing them down lightly.
- Bake for about 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool down before unmolding it.
- If desired, before serving, sprinkle the surface with icing sugar.
