Peach and Chocolate Cake

The Peach and Chocolate Cake is a delicious merging of the sweetness of sun-ripened peaches and the intensity of chocolate. Here is the recipe:

Ingredients

  • 200 g of all-purpose flour
  • 100 g of sugar
  • 100 g of room temperature butter
  • 3 eggs
  • 1 sachet of baking powder
  • 1 pinch of salt
  • 2 ripe peaches
  • 100 g of dark chocolate
  • Icing sugar for decoration (optional)

Preparation

  1. Preheat the oven to 180 °C (350 °F) and butter and flour a cake pan approximately 24 cm in diameter.
  2. Slice the peaches thinly after washing and peeling them.
  3. Melt the chocolate in a double boiler or in the microwave and let it cool down a bit.
  4. In a large bowl, mix the soft butter with the sugar until you obtain a homogeneous and foamy mixture.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Incorporate the sifted flour with the baking powder and a pinch of salt, mixing gently to prevent lumps.
  7. Add the melted chocolate to the mixture and stir until you get a uniform batter.
  8. Pour the batter into the prepared pan and level it with a spatula.
  9. Arrange the peach slices on the surface of the batter, pressing them down lightly.
  10. Bake for about 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  11. Let the cake cool down before unmolding it.
  12. If desired, before serving, sprinkle the surface with icing sugar.
