Peach and Amaretti Tart

Ingredients

For the shortcrust pastry:

  • 300 g of all-purpose flour
  • 150 g of cold butter, cubed
  • 120 g of sugar
  • 1 large egg
  • Zest of 1 lemon
  • A pinch of salt

For the filling:

  • 5-6 ripe peaches
  • 150 g of amaretti biscuits
  • 2 egg yolks
  • 100 ml of cream (fresh cream)
  • 30 g of powdered sugar
  • A few drops of almond extract (optional)

Preparation

  1. Start by preparing the shortcrust pastry: in a large bowl or on a work surface, mix the flour with sugar and a pinch of salt. Add the cold butter cubes and work quickly with your fingertips until you get a sandy mixture.
  2. Add the egg and grated lemon zest and knead briefly until a ball forms. Wrap it with cling film and let it rest in the refrigerator for at least 30 minutes.
  3. In the meantime, prepare the filling: wash the peaches, cut them in half, remove the pits and slice them, not too thin.
  4. Crush the amaretti biscuits in a bowl, leaving some whole for the final decoration.
  5. Mix the egg yolks with the cream, powdered sugar, and, if you like, a few drops of almond extract.
  6. Preheat the oven to 180 °C.
  7. Roll out the shortcrust pastry into an even layer and use it to line a previously buttered and floured tart pan. Prick the base with a fork.
  8. Distribute the crushed amaretti over the bottom of the pastry.
  9. Place the peach slices on top of the amaretti and pour over the egg and cream mixture.
  10. If desired, decorate with the whole amaretti biscuits set aside.
  11. Bake for about 30-35 minutes or until the pastry is golden.
  12. Let it cool completely before serving.
