Peach and Amaretti Tart

Ingredients
For the shortcrust pastry:
- 300 g of all-purpose flour
- 150 g of cold butter, cubed
- 120 g of sugar
- 1 large egg
- Zest of 1 lemon
- A pinch of salt
For the filling:
- 5-6 ripe peaches
- 150 g of amaretti biscuits
- 2 egg yolks
- 100 ml of cream (fresh cream)
- 30 g of powdered sugar
- A few drops of almond extract (optional)
Preparation
- Start by preparing the shortcrust pastry: in a large bowl or on a work surface, mix the flour with sugar and a pinch of salt. Add the cold butter cubes and work quickly with your fingertips until you get a sandy mixture.
- Add the egg and grated lemon zest and knead briefly until a ball forms. Wrap it with cling film and let it rest in the refrigerator for at least 30 minutes.
- In the meantime, prepare the filling: wash the peaches, cut them in half, remove the pits and slice them, not too thin.
- Crush the amaretti biscuits in a bowl, leaving some whole for the final decoration.
- Mix the egg yolks with the cream, powdered sugar, and, if you like, a few drops of almond extract.
- Preheat the oven to 180 °C.
- Roll out the shortcrust pastry into an even layer and use it to line a previously buttered and floured tart pan. Prick the base with a fork.
- Distribute the crushed amaretti over the bottom of the pastry.
- Place the peach slices on top of the amaretti and pour over the egg and cream mixture.
- If desired, decorate with the whole amaretti biscuits set aside.
- Bake for about 30-35 minutes or until the pastry is golden.
- Let it cool completely before serving.
