Peach and amaretti cake

Ingredients

  • 3 ripe peaches
  • 150 g of amaretti
  • 200 g of wheat flour
  • 100 g of granulated sugar
  • 100 g of soft butter
  • 3 eggs
  • 1 packet of baking powder
  • 1 pinch of salt
  • Icing sugar (for decoration)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Butter and flour a cake pan.
  3. Wash, peel, and cut the peaches into wedges or cubes.
  4. In a bowl, coarsely crush the amaretti, leaving some whole pieces to add crunchiness to the cake.
  5. In another bowl, whisk the eggs with the sugar until you obtain a frothy and light mixture.
  6. Add the soft butter to the mixture of eggs and sugar, mixing well.
  7. Incorporate the sifted flour, pinch of salt, and baking powder, mixing gently to avoid lumps.
  8. Fold in the crushed amaretti and peaches into the batter, mixing gently to evenly distribute them.
  9. Pour the dough into the prepared pan and level the surface with a spatula.
  10. Bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  11. Remove from the oven and let the cake cool on a wire rack.
  12. Once cool, sprinkle the surface with icing sugar for decoration.
