Peach and Almond Cake

Peach and Almond Cake is a delicious and fragrant dessert, perfect for summer when peaches are in season. Here’s the recipe:

Ingredients

  • 3 ripe but still firm peaches
  • 200 g of sugar
  • 200 g of butter at room temperature
  • 200 g of 00 flour
  • 100 g of finely chopped almonds
  • 50 g of flaked almonds for garnishing
  • 3 eggs
  • 1 packet of baking powder
  • Grated zest of 1 lemon
  • A pinch of salt

Preparation

  1. Preheat the oven to 180°C.
  2. In a bowl, cream the soft butter with the sugar until the mixture is light and fluffy.
  3. Add the eggs, one at a time, continuing to mix.
  4. Incorporate the grated lemon zest and a pinch of salt.
  5. Mix the flour with the baking powder and finely chopped almonds, then combine these dry ingredients to the butter, sugar, and egg mixture, mixing well until you obtain a homogeneous dough.
  6. Wash, peel, and slice the peaches.
  7. Butter and flour a 24 cm diameter mold, pour in some of the batter leveling it.
  8. Arrange the peach slices on top so that they cover the entire surface and pour the rest of the batter.
  9. Level the surface and decorate with flaked almonds.
  10. Bake and cook for about 40-45 minutes or until golden and a toothpick inserted in the center comes out clean.
  11. Allow the cake to cool in the mold for about 10 minutes, then transfer it onto a wire rack to cool completely.
