Pea Roll with Cured Ham and Sun-Dried Tomatoes

The pea roll with cured ham and sun-dried tomatoes is a delightful and colorful dish, perfect as an appetizer or a light main course. Here is the recipe:

Ingredients

300 g of fresh or frozen peas
2 eggs
Salt and pepper to taste
Nutmeg to taste
50 g of grated Parmesan cheese
100 g of thinly sliced cured ham
50 g of sun-dried tomatoes in oil
200 g of ricotta cheese
Extra virgin olive oil
Butter to grease the baking dish

Preparation

Preheat the oven to 180 °C and grease a baking dish with some butter.
If using fresh peas, blanch them for a few minutes in salted water. If they are frozen, thaw them according to the package instructions.
Blend the cooked peas with an immersion blender until smooth. Let it cool.
Beat the eggs in a bowl, add salt, pepper, and a grating of nutmeg to your taste.
Add the blended peas to the beaten eggs and mix well. Stir in the grated Parmesan and mix again.
Pour the mixture into the prepared baking dish and level it with a spatula so that it is even.
Bake in the oven for about 20 minutes or until the mixture is set and slightly golden on top.
Meanwhile, cut the sun-dried tomatoes into strips and mix them with the ricotta, season with a drizzle of extra virgin olive oil and adjust salt if needed.
Once baked, remove the roll from the oven and let it cool slightly. Then invert it onto a sheet of parchment paper and spread the ricotta and sun-dried tomatoes mixture on it.
Arrange the slices of cured ham evenly on top.
Roll up the roll using the parchment paper and put it in the refrigerator for at least an hour before slicing it.

Serve the pea roll sliced as an appetizer or main dish.
