Ingredients

  • 300g of fresh or frozen peas
  • 1 clove of garlic
  • Juice of 1 lemon
  • 2 tablespoons of tahini (sesame seed paste)
  • 3 tablespoons of extra virgin olive oil
  • A pinch of salt
  • Black pepper to taste
  • Fresh mint or basil (for an Italian touch), to liking
  • Water as needed (if necessary for consistency)

Preparation

  1. Start by cooking the peas in slightly salted water until they are tender. If you are using frozen peas, follow the instructions on the package for the cooking time.

  2. Once cooked, drain them and if you prefer a brighter green color, quickly immerse them in ice water to stop the cooking and set the color.

  3. Drain the cooled peas and put them in a food processor with the garlic clove, lemon juice, tahini, a pinch of salt, and some black pepper.

  4. Blend all the ingredients until you obtain a creamy and homogeneous consistency. If the cream is too thick, add a little water to reach the desired consistency.

  5. Add the extra virgin olive oil and mix or blend briefly to combine.

  7. Taste and adjust the seasoning with salt, pepper, or lemon according to your personal taste.

  8. Serve the pea hummus with a drizzle of oil and, if you wish, garnish with some mint or basil leaves and a pinch of black pepper.
