Pea Fritters with Yogurt Sauce

Pea fritters are a simple and tasty dish, ideal as an appetizer or snack. Paired with a yogurt sauce, it turns into a fresh and light dish. Here’s how to make them.

Ingredients

For the fritters:

  • 200 g of fresh or frozen peas
  • 1 egg
  • 100 g of flour
  • 50 ml of milk
  • 1 tablespoon of grated Parmesan cheese
  • Salt and pepper to taste
  • Oil for frying

For the yogurt sauce:

  • 125 g of Greek or natural yogurt
  • 1 tablespoon of lemon juice
  • 1 tablespoon of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped chives or fresh mint, to taste

Preparation

  1. Start with preparing the batter for the fritters. If using frozen peas, thaw them and blanch in boiling water for a few minutes, then drain. If the peas are fresh, simply cook them in boiling water until tender.

  2. With an immersion blender or in a food processor, blend the peas with the egg, then add milk, flour, Parmesan, salt, and pepper. Mix until you have a smooth mixture.

  3. Heat the oil in a frying pan and, once hot, use a spoon to pour small mounds of the batter, letting them brown on both sides.

  4. Drain the fritters on paper towels to remove excess oil.

For the yogurt sauce:

  1. In a small bowl, mix the yogurt with the lemon juice, olive oil, salt, and pepper. Add chopped chives or fresh mint for a touch of freshness and mix well.

Serve the hot fritters accompanied by the yogurt sauce.
