Pea Fritters

Pea fritters are a simple and tasty dish, perfect as an appetizer or as a snack.

Ingredients

  • 200 g of fresh or frozen peas
  • 1 egg
  • 100 g of flour
  • 50 ml of milk
  • 1 tablespoon of grated Parmesan cheese
  • Salt and pepper to taste
  • Oil for frying
  • (Optional) 1 tablespoon of chopped fresh mint

Preparation

  1. If you are using fresh peas, blanch them for a few minutes in boiling salted water, then drain and let them cool. If you are using frozen peas, you can quickly defrost them under warm water.

  2. In a blender, puree the peas (reserving a tablespoon to add texture to the fritters) until smooth.

  3. In a bowl, beat the egg and add the milk, mixing well.

  4. Incorporate the pea puree and the tablespoon of whole peas set aside into the egg and milk mixture.

  5. Add flour, grated Parmesan cheese, mint (if using), salt and pepper, mixing until you have a smooth batter.

  6. Heat plenty of oil in a frying pan and, when hot, spoon the batter into the pan to form the fritters.

  7. Fry the fritters until they are golden on both sides, then drain on paper towels to remove excess oil.

  8. Serve the fritters hot, accompanied if desired with a fresh salad or a yogurt sauce.

Curiosity

Pea fritters are a dish that you can easily adapt according to taste and needs. For example, for a lighter version, you can bake them in the oven on a tray covered with baking paper until golden, turning them once halfway through cooking.
