Pea Fritters
17/11/2023Pea fritters are a simple and tasty dish, perfect as an appetizer or as a snack.
Ingredients
- 200 g of fresh or frozen peas
- 1 egg
- 100 g of flour
- 50 ml of milk
- 1 tablespoon of grated Parmesan cheese
- Salt and pepper to taste
- Oil for frying
- (Optional) 1 tablespoon of chopped fresh mint
Preparation
-
If you are using fresh peas, blanch them for a few minutes in boiling salted water, then drain and let them cool. If you are using frozen peas, you can quickly defrost them under warm water.
-
In a blender, puree the peas (reserving a tablespoon to add texture to the fritters) until smooth.
-
In a bowl, beat the egg and add the milk, mixing well.
-
Incorporate the pea puree and the tablespoon of whole peas set aside into the egg and milk mixture.
-
Add flour, grated Parmesan cheese, mint (if using), salt and pepper, mixing until you have a smooth batter.
-
Heat plenty of oil in a frying pan and, when hot, spoon the batter into the pan to form the fritters.
-
Fry the fritters until they are golden on both sides, then drain on paper towels to remove excess oil.
-
Serve the fritters hot, accompanied if desired with a fresh salad or a yogurt sauce.
