Pea and Ricotta Croquettes

Pea and ricotta croquettes are a delicious and fairly simple dish to prepare. Here is a recipe to make them:

Ingredients

  • 200 grams of fresh or frozen peas
  • 250 grams of well-drained ricotta
  • 1 egg
  • 50 grams of grated Parmesan cheese
  • 80 grams of breadcrumbs
  • Salt and pepper to taste
  • Nutmeg to taste
  • Vegetable oil for frying

Preparation

  1. Start by cooking the peas: if you use fresh peas, you should first blanch them for about 10 minutes, while if you use the frozen ones, follow the directions on the package. Once cooked, drain them and let them cool.

  2. Mash the peas with a fork or pass them through a food mill to obtain a mixture that is not too smooth, but with some pieces to give texture to the croquettes.

  3. Add to the pea puree the ricotta, egg, Parmesan, a pinch of salt, pepper, and nutmeg, mixing well all the ingredients until you get a homogeneous mixture.

  4. With your hands, form small oval or round-shaped croquettes, then roll them in breadcrumbs so that they are well covered.

  5. Heat the vegetable oil in a pan and fry the croquettes until they become golden and crispy on all sides.

  6. Once cooked, place them on some paper towels to remove the excess oil.

Serve warm as an appetizer or as a main dish, accompanied by a fresh seasonal salad.
