Pavesini candy cane

Pavesini candy cane are a fun and festive treat that combines the classic Italian Pavesini biscuits with the taste and appearance of traditional menthol sugar sticks (candy cane) commonly found during the Christmas holidays. This is a sweet variant that can be easily made. Here is the recipe:

Ingredients

  • 200 g of Pavesini
  • 100 g of white chocolate
  • 50 g of mint sugar sticks (candy cane)
  • 1 tablespoon of coconut oil (optional)

Preparation

  1. Start by chopping the mint sugar sticks very finely. Divide them into two parts: one for decorating and one to be incorporated into the chocolate.
  2. Break the white chocolate into pieces and melt it in a double boiler or in the microwave, taking care to stir often to prevent the chocolate from burning. If you wish, you can add a tablespoon of coconut oil to make the chocolate more fluid and easier to work with.
  3. Once the chocolate is melted and smooth, incorporate half of the crushed candy cane pieces.
  4. Dip each Pavesino in the melted chocolate, covering it halfway or completely, according to your preferences.
  5. Place the chocolate-coated Pavesini on a rack with parchment paper underneath to catch any excess chocolate.
  6. Sprinkle the chocolate-covered part with the remaining candy cane pieces before the chocolate solidifies.
  7. Allow the Pavesini to cool down and the chocolate to solidify completely before serving.

Curiosity

Pavesini are light and crispy biscuits originating from the province of Novara, created in 1948 by the Pavesi company (now part of the Barilla Group). They are known for their versatility in various sweet recipes, such as the creation of spoon desserts or the preparation of tiramisu.

To finish off beautifully, you could accompany these treats with an espresso coffee or a vin santo to soak the biscuits, following a very beloved Italian tradition.
