Ingredients
- 250 g of fresh egg pasta
- 200 g of burrata
- 4-5 fresh artichokes (or canned artichoke hearts if not in season)
- 1 clove of garlic
- 400 g of peeled tomatoes or tomato puree
- Extra virgin olive oil (EVO)
- Salt and pepper to taste
- A few leaves of fresh basil
- Grated Parmigiano-Reggiano to garnish (optional)
- Lemon juice
Preparation
- Start by cleaning the artichokes, removing the outer, harder leaves and the thorny tips. Cut them into quarters and remove the inner hay if present. Soak them in lemon water to prevent them from turning black.
- Blanch the artichokes in salted water for about 5-10 minutes, then drain them and let them cool.
- In a pan, heat some EVO oil and add a whole garlic clove. Add the artichokes and sauté lightly. Season with salt and pepper to taste and then remove from the heat.
- Prepare the tomato sauce in a separate pan. Heat a drizzle of oil with a clove of garlic. Add the peeled tomatoes or puree and cook over medium heat for 15-20 minutes. Season with salt, pepper, and add the basil towards the end.
- Take the fresh pasta and roll it out into a thin layer. Cut into squares of about 8x8 cm.
- Place a piece of burrata and an artichoke heart in the center of each square, then close the pasta into the shape of a bundle, sealing the edges well. You can use a little water to help seal the closure.
- Cook the fagottini in abundant salted water for a few minutes until they float.
- Gently drain the fagottini and place them on the plates.
- Pour the hot tomato sauce over the top and garnish with a sprinkle of Parmesan and fresh basil, if you like.
Serve immediately and enjoy this exquisite blend of flavors!
