Ingredients
- 320 g of pasta (e.g., spaghetti or linguine)
- 200 g of peeled and cleaned shrimp
- 2 medium zucchinis
- 200 g of cherry tomatoes
- 2 cloves of garlic
- Fresh parsley to taste
- Extra virgin olive oil
- Salt
- Pepper
- 1 small chili pepper (optional)
- Dry white wine (a glass, for deglazing)
Preparation
- Begin by washing the zucchinis and cutting them into rounds or sticks, according to your preference.
- Wash the cherry tomatoes and cut them in half.
- In a large pan, heat a drizzle of extra virgin olive oil with the garlic cloves (whole or minced, as you prefer). Add the chili pepper if you want a spicier flavor.
- Once the garlic is golden, add the zucchinis to the pan and let them fry for a few minutes until they start to change color.
- Add the cherry tomatoes and a pinch of salt, cover the pan, and let it cook for a few minutes. If necessary, add a little water to prevent the sauté from drying out too much.
- In another pan, cook the shrimp with a drizzle of olive oil and a pinch of salt. Deglaze with the white wine and let it evaporate.
- Cook the pasta in plenty of salted water following the package’s time instructions for al dente cooking.
- Drain the pasta and save a cup of the cooking water.
- Add the shrimp to the zucchini and tomatoes, mix carefully and cook for 1-2 minutes.
- Add the pasta to the pan with a bit of the cooking water to combine everything.
- Serve the pasta hot, with a sprinkling of chopped fresh parsley and a drizzle of raw extra virgin olive oil.
- Optionally, finish the dish with some grated lemon zest to add freshness.
