Zucchini and Tuna Pasta

Ingredients
- 320 g of pasta (spaghetti, penne, fusilli, or your preferred type)
- 2-3 medium zucchinis
- 160 g of canned tuna in oil (drained)
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley (optional)
- Grated lemon zest (optional)
- A splash of white wine (optional)
Preparation
- Wash the zucchinis and cut them into rounds or julienne strips, according to your preference.
- In a large pan, heat a drizzle of extra virgin olive oil with a whole clove of garlic (to be removed later) or minced if you prefer to leave it in.
- Add the zucchinis to the pan and sauté over medium-high heat until golden brown and tender. If you like, add a splash of white wine and let it evaporate to enhance the flavor.
- Meanwhile, cook the pasta in a pot with plenty of salted water, following the cooking time indicated on the package for al dente pasta.
- Drain the tuna from its oil and crumble it coarsely.
- Once the zucchinis are cooked, add the tuna to the pan and stir for a couple of minutes, just enough to mix it well and warm it up.
- Drain the al dente pasta and transfer it to the pan with the zucchinis and tuna. Sauté everything together for a minute so that the pasta absorbs the flavors.
- If you wish, you can finish the dish with chopped parsley and/or grated lemon zest for a touch of freshness.
- Plate, dress with a raw drizzle of extra virgin olive oil, a grind of pepper, and serve hot.
