Zucchini and Tuna Pasta

Ingredients

  • 320 g of pasta (spaghetti, penne, fusilli, or your preferred type)
  • 2-3 medium zucchinis
  • 160 g of canned tuna in oil (drained)
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley (optional)
  • Grated lemon zest (optional)
  • A splash of white wine (optional)

Preparation

  1. Wash the zucchinis and cut them into rounds or julienne strips, according to your preference.
  2. In a large pan, heat a drizzle of extra virgin olive oil with a whole clove of garlic (to be removed later) or minced if you prefer to leave it in.
  3. Add the zucchinis to the pan and sauté over medium-high heat until golden brown and tender. If you like, add a splash of white wine and let it evaporate to enhance the flavor.
  4. Meanwhile, cook the pasta in a pot with plenty of salted water, following the cooking time indicated on the package for al dente pasta.
  5. Drain the tuna from its oil and crumble it coarsely.
  6. Once the zucchinis are cooked, add the tuna to the pan and stir for a couple of minutes, just enough to mix it well and warm it up.
  7. Drain the al dente pasta and transfer it to the pan with the zucchinis and tuna. Sauté everything together for a minute so that the pasta absorbs the flavors.
  8. If you wish, you can finish the dish with chopped parsley and/or grated lemon zest for a touch of freshness.
  9. Plate, dress with a raw drizzle of extra virgin olive oil, a grind of pepper, and serve hot.
