Pasta zucchini and sausage

Pasta with zucchini and sausage is a delicious and easy dish to prepare. Below you will find the list of ingredients and the step-by-step procedure.

Ingredients

  • 320 g of pasta (penne, spaghetti or your preference)
  • 2 medium zucchinis
  • 200 g of fresh sausage (you can use pork or a chicken or turkey alternative, depending on your preferences)
  • 1 clove of garlic
  • 1/2 glass of white wine
  • Extra virgin olive oil
  • Salt and pepper to taste
  • grated Parmesan cheese (optional)
  • A pinch of chili pepper (optional)

Preparation

  1. Wash and cut the zucchini into rounds or cubes, depending on your preference.

  2. In a large pan, sauté a clove of garlic in extra virgin olive oil. You can choose to remove it after it has browned or leave it in to add more flavor.

  3. Add the chopped zucchini to the pan and sauté over medium-high heat for a few minutes until they become slightly golden. Add a pinch of salt.

  4. In the meantime, remove the skin from the sausage and crumble it.

  5. Add the crumbled sausage to the zucchini and let it cook, making sure to break up any large pieces with a wooden spoon.

  6. Deglaze with white wine and let the alcohol evaporate on high heat.

  7. Lower the heat and continue cooking until the sausage is well cooked and the zucchini are soft but not mushy.

  8. Meanwhile, bring a pot of salted water to a boil and cook the pasta al dente according to the package instructions.

  9. Drain the pasta and transfer it to the pan with the zucchini and sausage, tossing everything together for a few minutes to blend the flavors.

  10. If desired, add pepper, chili pepper, and a sprinkle of grated Parmesan cheese before serving.

Curiosity

This recipe can be adapted in many variants. For instance, if you prefer a lighter dish, you can choose not to use the sausage and replace it with shrimp or simply omit it. In the same way, you can add aromatic herbs like basil or mint for a touch of freshness.
