Pasta with Zucchini Cream and Burrata

Ingredients

  • 320 g of pasta (penne or spaghetti work well)
  • 2-3 medium zucchini
  • 1 small onion
  • 1 clove of garlic
  • 200 g of burrata
  • Extra virgin olive oil
  • Salt and black pepper to taste
  • Fresh basil
  • Grated Parmesan cheese (optional)

Preparation

  1. Start by washing the zucchini and slicing them into rounds or cubes. If you prefer, you can partially peel them for a more delicate cream.
  2. Finely chop the onion and garlic and gently fry them in a pan with a drizzle of extra virgin olive oil.
  3. Add the chopped zucchini to the pan and let them cook until they become soft. Season with salt and pepper.
  4. In the meantime, bring a large pot of salted water to a boil and cook the pasta until it reaches the desired doneness.
  5. When the zucchini is cooked, transfer it to a suitable container to blend with an immersion blender until you get a smooth cream. If you prefer, you can leave some pieces whole for texture.
  6. Drain the pasta al dente and reserve some of the cooking water.
  7. Pour the pasta into the pan with the zucchini cream. If it is too thick, add some cooking water to thin it out.
  8. Cut the burrata into pieces and add it to the pasta, letting the heat soften it and become stringy.
  9. Serve immediately, adding fresh basil leaves and, if you like, a sprinkle of Parmesan cheese.

Curiosity: Burrata is a typical cheese from the Puglia region, obtained by working mozzarella with fresh cream. Its external texture is similar to that of mozzarella, but the inside is soft and creamy.
