Tuna and Bell Pepper Pasta

Ingredients

  • 320 g of pasta (penne, fusilli, or spaghetti are fine)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 160 g of tuna in oil
  • 1 clove of garlic
  • 3 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • A pinch of chili pepper (optional)
  • Chopped fresh parsley (optional)

Preparation

  1. Start by cleaning the bell peppers: remove the stem, cut them in half, eliminate the seeds and the white inner parts, and then cut them into strips or cubes.
  2. In a large frying pan, heat the extra virgin olive oil and add the whole or chopped garlic clove, depending on your taste. If you prefer a gentler flavor, leave it whole and remove it after a few minutes.
  3. Add the peppers to the pan and cook over medium heat for about 15 minutes, or until they start to soften. If you like, you can add a pinch of chili pepper to make the dish more lively.
  4. Meanwhile, bring a pot of salted water to a boil and cook the pasta according to the instructions on the package until it is al dente.
  5. Drain the tuna from the preserving oil and add it to the peppers, letting it flavor for a few minutes, being careful not to cook it too much to avoid drying it out.
  6. Drain the pasta and transfer it to the frying pan with the peppers and tuna, mixing gently to blend the flavors.
  7. Finish the dish with a further sprinkle of fresh pepper and, if you like, some chopped fresh parsley.
  8. Serve immediately, nice and hot.
