Tuna and Bell Pepper Pasta

Ingredients
- 320 g of pasta (penne, fusilli, or spaghetti are fine)
- 1 red bell pepper
- 1 yellow bell pepper
- 160 g of tuna in oil
- 1 clove of garlic
- 3 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- A pinch of chili pepper (optional)
- Chopped fresh parsley (optional)
Preparation
- Start by cleaning the bell peppers: remove the stem, cut them in half, eliminate the seeds and the white inner parts, and then cut them into strips or cubes.
- In a large frying pan, heat the extra virgin olive oil and add the whole or chopped garlic clove, depending on your taste. If you prefer a gentler flavor, leave it whole and remove it after a few minutes.
- Add the peppers to the pan and cook over medium heat for about 15 minutes, or until they start to soften. If you like, you can add a pinch of chili pepper to make the dish more lively.
- Meanwhile, bring a pot of salted water to a boil and cook the pasta according to the instructions on the package until it is al dente.
- Drain the tuna from the preserving oil and add it to the peppers, letting it flavor for a few minutes, being careful not to cook it too much to avoid drying it out.
- Drain the pasta and transfer it to the frying pan with the peppers and tuna, mixing gently to blend the flavors.
- Finish the dish with a further sprinkle of fresh pepper and, if you like, some chopped fresh parsley.
- Serve immediately, nice and hot.
