Pasta with tuna and peas

Ingredients

  • 320 g of pasta (penne, fusilli, or another shape of your choice)
  • 200 g of canned tuna in oil, drained
  • 150 g of frozen or fresh peas
  • 1 small onion, finely chopped
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Water for cooking the pasta
  • (Optional) A pinch of chili pepper
  • (Optional) Chopped parsley for garnish

Preparation

  1. Bring a pot of salted water to a boil to cook the pasta. Once boiling, add the pasta and cook according to the instructions on the package.
  2. Meanwhile, in a frying pan, heat the extra virgin olive oil and sauté the chopped onion until it becomes translucent.
  3. Add the peas to the pan and, if they are frozen, let them cook for a few minutes with a bit of water until they are cooked but still crunchy.
  4. Add the drained tuna, flaking it well with a fork, and let everything simmer for a few minutes. Adjust with salt and pepper, and if you like, add a pinch of chili pepper.
  5. When the pasta is al dente, drain it, saving a cup of the cooking water, and transfer it to the pan with the tuna and peas.
  6. Mix the pasta well with the sauce, adding some of the reserved cooking water if necessary to make it creamier.
  7. Serve hot, garnished with chopped parsley if desired.
