  • 320 grams of pasta (spaghetti, penne or your preferred short pasta)
  • 200 grams of canned tuna in oil
  • 100 grams of pitted black olives
  • 2 cloves of garlic
  • Parsley to taste
  • Extra virgin olive oil
  • Salt
  • Pepper (optional)

Preparation

  1. Bring water to a boil for the pasta in a large pot and, when boiling, add salt.
  2. Add the pasta and cook according to the package instructions to achieve an al dente texture.
  3. Meanwhile, drain the oil from the tuna and slice the black olives into rounds.
  4. In a large frying pan, heat some extra virgin olive oil and sauté the garlic cloves until they turn golden. Then, remove the garlic.
  5. Add the crumbled tuna to the pan and let it flavor for a couple of minutes over medium heat.
  6. Add the black olives and mix well, cooking for another 2-3 minutes.
  7. Drain the al dente pasta and transfer it to the pan with the tuna and olive sauce.
  8. Toss everything together in the pan, adding a bit of the pasta cooking water if necessary to make the sauce creamier.
  9. Serve the pasta hot, garnished with chopped parsley to taste and a sprinkle of pepper.

If you wish, you can add an Italian touch by adding a handful of salted capers, well rinsed, and perhaps a pinch of red pepper flakes for a stronger flavor.
