Pasta with Trout

Here is a recipe to prepare a delicious pasta with trout.

Ingredients

  • 320 g of pasta (penne, spaghetti, or linguine work well)
  • 1 medium-sized fresh trout, cleaned and filleted
  • 2 cloves of garlic
  • 1/2 glass of white wine
  • 2 tablespoons of extra virgin olive oil
  • Chopped fresh parsley
  • Salt and pepper to taste
  • Grated zest of 1 lemon

Preparation

  1. Start by bringing a pot of generously salted water to a boil for cooking the pasta.
  2. Meanwhile, heat the extra virgin olive oil in a pan over medium heat and fry the garlic cloves until golden.
  3. Add the trout fillets to the pan and cook for a few minutes per side, until the flesh is easily flaked with a fork.
  4. Deglaze with the white wine and allow the alcohol to evaporate. Add salt and pepper to taste. Remove the garlic cloves if you prefer a less intense flavor.
  5. Once the pasta is cooked al dente, drain it and transfer it to the pan with the trout. Mix gently to flavor the pasta.
  6. Add the chopped parsley and grated lemon zest, mix again, and serve immediately.

Curiosity

Trout is a highly appreciated freshwater fish in cooking for its delicate and tasty flesh. Paired with pasta, it provides a balanced and refined dish, perfect for those looking for something different from the usual seafood dish. Lemon, with its citrus note, enhances the delicate taste of the trout without overpowering it.

As an Italian variation, you can add roughly cut fresh arugula or thinly sliced zucchini during the cooking of the trout, for an extra touch of color and flavor. Enjoy your meal!
