Pasta with Treviso radicchio and sausage

Ingredients

  • 320 g of pasta (penne or rigatoni work well)

  • 200 g of sausage

Preparation

  1. Start by cleaning the Treviso radicchio, removing the harder outer leaves and the core, then cut it into thin strips and soak it in cold water for a few minutes to lessen its bitterness.

  2. While the radicchio is soaking, take the sausage, remove the casing and crumble it with your hands.

  3. Thinly slice the onion and sauté it in a pan with extra virgin olive oil until it becomes translucent.

  4. Add the crumbled sausage to the pan and let it brown until it has taken color, then deglaze with the white wine and let it evaporate.

  5. Drain the radicchio, squeeze it slightly, and add it to the pan with the sausage. Season with salt and pepper and cook over low heat until the radicchio has wilted, stirring occasionally.

  6. In the meantime, bring a pot of salted water to a boil and cook the pasta al dente, following the directions on the package.

  7. Drain the pasta, reserving some of the cooking water, and transfer it to the pan with the radicchio and sausage. If necessary, add some cooking water to make the sauce creamier.

  8. Toss the pasta in the sauce for a minute over high heat, then serve hot with a sprinkle of grated Parmesan cheese.
