Pasta with Swordfish and Zucchini

Pasta with swordfish and zucchini is a delicious and relatively simple dish to prepare. Here I provide you with a typically Italian base recipe to best enjoy these ingredients.

Ingredients

  • 320g of pasta (like penne or spaghetti)
  • 200g of swordfish, cut into cubes
  • 2 medium zucchini, sliced into rounds or half-moons
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley (optional)
  • Lemon juice (optional)
  • Chili pepper (optional, if you like it spicy)

Preparation

  1. Bring a pot of salted water to a boil and cook the pasta according to the instructions on the package, until it reaches the desired doneness (al dente).

  2. Meanwhile, in a large skillet, heat a drizzle of extra virgin olive oil and add the garlic clove, letting it brown for a few minutes.

  3. Add the swordfish cubes to the skillet, letting them cook for about 3-4 minutes, until they are golden on all sides. Remove the garlic if you prefer.

  4. Add the zucchini rounds (or half-moons) and let them cook, stirring occasionally, until they become tender but still crisp, about 5-7 minutes.

  5. Drain the pasta and add it to the swordfish and zucchini in the skillet. Stir well the ingredients over medium heat so the pasta gets flavored.

  6. Season with salt and pepper, and if you like, you can add a pinch of chili pepper to give a spicy touch.

  7. Off the heat, if desired, you can add some chopped fresh parsley and a squirt of lemon juice to enhance the flavors.

Serve the pasta hot, maybe with a drizzle of raw olive oil and a sprinkle of fresh parsley for garnish.

Curiosity

Swordfish is a highly prized fish in Mediterranean cuisine, especially in coastal regions where it is freshly caught. A little trick to make the swordfish particularly tasty is to do a quick marinade with oil, lemon, salt, and pepper, letting the cubes of fish rest for about 15 minutes before cooking them. This step will tend to enhance its flavor without overpowering it.
