Pasta with Swordfish and Mint

The pasta dish with swordfish and mint is a delightful example of Mediterranean cuisine that blends delicate flavors with the intense ones of the sea. Here is a recipe that can guide you in its preparation.

Ingredients

  • 320g of pasta (such as penne, spaghetti or linguine)
  • 300g of fresh swordfish
  • 2 sprigs of fresh mint
  • 250g of cherry tomatoes
  • 1 clove of garlic
  • Extra virgin olive oil (to taste)
  • Salt and pepper (to taste)
  • Juice of 1/2 lemon (optional)
  • White wine (a splash for deglazing, if liked)

Preparation

  1. Clean the swordfish by removing the skin and any bones, and cut it into cubes.
  2. Wash the cherry tomatoes and cut them in half.
  3. In a large pan, lightly fry the finely chopped garlic in extra virgin olive oil.
  4. Add the swordfish cubes to the pan and brown them briefly. If you wish, you can deglaze with a bit of white wine and let the alcohol evaporate.
  5. Add the cherry tomatoes and cook over medium-high heat for a few minutes until they start to fall apart. Adjust with salt and pepper.
  6. Meanwhile, cook the pasta in plenty of salted water following the package instructions for an al dente texture.
  7. Drain the pasta and transfer it to the pan with the swordfish and tomato sauce, adding a drizzle of oil if needed.
  8. Add the chopped fresh mint (keeping some aside for the final garnish) and if you like, a little lemon juice to enhance the flavors.
  9. Mix well to blend the ingredients.
  10. Serve the pasta hot, garnishing the dish with the mint leaves set aside.

Curiosity

Swordfish is highly valued in Sicilian cuisine, where it is paired with simple ingredients that enhance its flavor without overshadowing it. Mint adds a fresh and fragrant note that goes well with the delicate taste of fish and with the sweetness of the tomatoes.
