Ingredients
- 320 grams of short pasta (e.g., penne or rigatoni)
- 200 grams of swordfish
- 200 grams of fresh or frozen fava beans
- 1 small white onion
- 100 ml of white wine
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Fresh chopped parsley for garnish

If you’re using fresh fava beans, remove the outer skin and, if necessary, blanch them briefly to make it easier to remove the second skin. If using frozen fava beans, follow the package instructions for thawing.

Cut the swordfish into cubes about 2 cm on each side.

In a large non-stick skillet, heat the extra virgin olive oil and sauté the sliced onion until it becomes transparent.

Add the swordfish cubes to the skillet and cook them until they are colored on all sides.

Deglaze with white wine and let the alcohol evaporate over moderate heat.

Add the fava beans to the skillet with the swordfish, stir gently, and cook for another 5-7 minutes, until the fava beans are tender. Adjust with salt and pepper.

Meanwhile, cook the pasta in a pot of boiling salted water, following the package directions for al dente cooking.

Once the pasta is cooked, drain it and add it to the skillet with the swordfish and fava bean sauce.
