Pasta with Swordfish

Pasta with swordfish is a delicious dish, typical of Sicilian cuisine. Here’s how it’s prepared:

Ingredients

  • 320 g of pasta (spaghetti, penne or tagliolini)
  • 200 g of swordfish steaks
  • 250 g of cherry tomatoes
  • 1 clove of garlic
  • 50 g of pitted black olives
  • A few desalted capers
  • Extra virgin olive oil
  • Chopped parsley
  • Salt and pepper to taste

Preparation

  1. Cut the swordfish into cubes and remove any bones.
  2. In a skillet, sauté the garlic with extra virgin olive oil. Once golden, remove it from the skillet.
  3. Add the swordfish to the skillet and sauté for a few minutes.
  4. Cut the cherry tomatoes in half and add them to the skillet with the swordfish. Cook over medium heat for about 5 minutes.
  5. Add the black olives and capers, and season with salt and pepper. Cook for another 3-4 minutes.
  6. Meanwhile, cook the pasta in salted water until it reaches the desired doneness (al dente is perfect).
  7. Drain the pasta and transfer it to the skillet with the swordfish dressing, tossing to blend the flavors well.
  8. Sprinkle with fresh chopped parsley before serving.

And for an Italian touch, I recommend pairing the dish with a good glass of fresh white wine, such as Grillo or Catarratto, which match perfectly with the delicate flavor of the swordfish.

Curiosity

Swordfish is highly valued in Sicilian cuisine not only for its delicate flavor and meaty texture but also for its versatility. It lends itself well to grilling, baking, or as the main ingredient in light sauces to dress pasta, as in this recipe.
