Ingredients
- 320 g of pasta of your choice (linguine, spaghetti, or fusilli work well)
- 200 g of buffalo stracciatella
- 250 g of cherry tomatoes
- 2 tablespoons of extra virgin olive oil
- 1 clove of garlic
- Salt and pepper to taste
- Fresh basil leaves for garnish
- (Optional) Shavings of Parmesan or pecorino cheese, to season
- (Optional) Fresh or flaked chili pepper, to add some spice
Preparation
- Bring a pot of salted water to a boil to cook the pasta.
- Meanwhile, in a sufficiently large skillet, heat the extra virgin olive oil with the peeled garlic clove. If you like a slightly spicy dish, you could also add chili pepper at this point.
- Once the garlic turns golden, add the halved cherry tomatoes and let them cook over medium-low heat until they start to soften and form a light sauce. Season with salt and pepper.
- Cook the chosen pasta following the instructions on the package to achieve an al dente consistency.
- Drain the pasta and pour it into the skillet with the tomatoes, mixing well to flavor it in the sauce. If necessary, you can add some cooking water to make the sauce creamier.
- Turn off the heat and add the buffalo stracciatella in pieces, stirring gently so that it melts slightly with the heat of the pasta.
- Serve immediately, garnishing with fresh basil leaves and, if desired, a sprinkling of grated cheese.
