Pasta with Stracchino and Sausage

Ingredients

  • 320 g of pasta (penne, rigatoni, or another shape of your choice)
  • 200 g of stracchino (you can also use another type of creamy cheese if you like)
  • 300 g of sausage (preferably pork type)
  • 1 small onion
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste (optional)
  • White wine (a splash for deglazing, optional)
  • Grated Parmesan cheese (optional, for garnish)
  • Pasta cooking water as needed

Preparation

  1. Start by bringing a pot of generously salted water to a boil to cook the pasta. When the water boils, add the pasta and cook it according to the package instructions, al dente.

  2. Meanwhile, in a large pan, sauté the finely chopped onion with a drizzle of extra virgin olive oil until it becomes translucent.

  3. Remove the casing from the sausage and crumble it. Add it to the pan with the onion and let it brown until it is well cooked. If you wish, you can deglaze with a splash of white wine until the alcohol has evaporated.

  4. Lower the heat and add the stracchino cheese in pieces, mixing well to melt it, using a bit of the pasta cooking water if necessary to achieve a smooth cream.

  5. Drain the pasta al dente, reserving some cooking water, and transfer it to the pan with the sausage and stracchino sauce.

  6. Mix well to combine the pasta with the sauce, adding a bit of cooking water if you see that the sauce is too thick.

  7. Serve the pasta and, if desired, add a sprinkle of ground black pepper and grated Parmesan cheese.
