Potato, Bacon, and Cheese Terrine

The potato, bacon, and cheese terrine is a rich and flavorful dish inspired by rustic cuisine. It is perfect to serve as an appetizer or a side dish. Here is the recipe:

Ingredients

  • 1 kg of potatoes
  • 200 g of smoked bacon slices
  • 200 g of cheese (such as Fontina, Taleggio, or any other melting cheese of your choice)
  • 2 eggs
  • 100 ml of fresh cream
  • Salt and pepper to taste
  • Grated nutmeg (optional)
  • Butter to grease the terrine
  • Breadcrumbs for the terrine

Preparation

  1. Preheat the oven to 180 °C and butter a baking terrine dish, then sprinkle it with a little breadcrumbs.
  2. Peel the potatoes and slice them thinly, using a mandolin or a well-sharpened knife.
  3. Boil the potatoes in salted water for about 3-4 minutes, then drain them and let them cool down.
  4. In a bowl, beat the eggs with the cream, add salt, pepper, and, if you like, a pinch of grated nutmeg.
  5. Start composing the terrine by making a layer of potatoes at the bottom, followed by a layer of bacon slices and then a layer of cheese cut into slices or cubes.
  6. Repeat the layers until all the ingredients are used, ending with a layer of potatoes.
  7. Pour the egg and cream mixture over everything, making sure it penetrates well between the layers.
  8. Cook in the preheated oven for about 1 hour or until the surface is golden brown and crispy.
  9. Let the terrine rest for about ten minutes before unmolding and serving it.

Trivia

The potato terrine is a traditional dish in many regions of Italy, often prepared during holidays or as comfort food on colder days. It varies greatly based on local traditions and available ingredients. For example, in some areas, mushrooms are added, or the bacon is substituted with cooked ham or speck. The cheese used can greatly influence the final flavor of the dish, so it’s always fun to experiment with different types.
