Pasta with Squid and Hard-boiled Egg Yolk
17/11/2023Pasta with squid and hard-boiled egg yolk is a delicious dish that combines the freshness of the fish with the creaminess of the yolk. Here is how to prepare it:
Ingredients
- 320 g of pasta (linguine or spaghetti)
- 400 g of cleaned squid, cut into rings
- 4 hard-boiled egg yolks
- 2 cloves of garlic
- Chopped fresh parsley
- Extra virgin olive oil
- Salt and pepper to taste
- Dry white wine (optional, for deglazing)
- Red pepper flakes (optional, for those who like a spicy flavor)
Preparation
-
Bring a pot of salted water to a boil for the pasta. When boiling, cook the pasta until al dente following the instructions on the package.
-
Meanwhile, in a large skillet, heat a bit of extra virgin olive oil and add the garlic cloves (you can leave them whole to remove later or chop them finely). If you prefer a spicy kick, add some red pepper flakes as well.
-
Add the squid rings to the skillet and sauté over medium-high heat for a few minutes. The squid will release its cooking water; be careful not to overcook it and make it too tough.
-
(Optional) Deglaze with a bit of dry white wine and let the alcohol evaporate.
-
Meanwhile, prepare the hard-boiled egg yolks by boiling the eggs for 9-10 minutes, then cooling in cold water and peeling them. Separate the yolks from the whites, keeping only the yolks for the recipe.
-
When the pasta is ready, drain it, reserving some of the cooking water, and transfer it to the skillet with the squid.
-
Mix well, adding a little cooking water if necessary to make the dish creamier.
-
Crumble the hard-boiled yolks over the skillet and gently incorporate them into the dish.
-
Finish with chopped fresh parsley, adjust the seasoning with salt and pepper, and serve hot.
Curiosity
Squid is a versatile ingredient in the kitchen, well-known in Mediterranean cuisine, and especially in Italian culinary tradition. They are often fried, but in this preparation, they are sautéed to maintain a delicate flavor that matches well with the creaminess of the hard-boiled yolk.
For a perfect wine pairing with this dish, you might choose a slightly aromatic white with good acidity, such as a Vermentino or a Fiano, to contrast the sweetness of the squid without overpowering its flavor.
