Squid and Artichoke Pasta

Squid and artichokes are a delicious pairing that goes very well with pasta. Here is a simple but tasty recipe to prepare an excellent dish of Squid and Artichoke Pasta.

Ingredients

  • 320 grams of pasta (like linguine or spaghetti)
  • 400 grams of cleaned squid, cut into rings
  • 4 artichokes
  • 2 cloves of garlic
  • Fresh parsley (to taste)
  • Extra virgin olive oil
  • Salt and pepper q.b.
  • 1/2 glass of dry white wine
  • Lemon juice (to prevent the artichokes from blackening)

Preparation

  1. Clean the artichokes by removing the tougher outer leaves and the tips, then cut them into wedges and place them in water acidulated with lemon to keep them from blackening.
  2. In a large pan, heat the oil with the garlic cloves. When the garlic begins to fry, add the squid and let it color for a couple of minutes.
  3. Add the artichokes drained from the acidulated water and let them cook together with the squid.
  4. Deglaze with white wine and let the alcohol evaporate. Season with salt and pepper.
  5. Meanwhile, cook the pasta in plenty of salted water, following the package instructions for al dente cooking.
  6. Drain the pasta and transfer it to the pan with the squid and artichokes, adding a little cooking water if necessary.
  7. Toss the pasta in the pan with the sauce for a few minutes until it’s well mixed with the created sauce.
  8. Chop some fresh parsley and sprinkle it on the pasta before serving.
