Pasta with speck

Ingredients

  • 320 grams of pasta (fusilli, penne, or a short pasta of your choice)
  • 150 grams of speck, cut into strips
  • 200 ml of cooking cream
  • 1 small onion
  • Extra virgin olive oil as needed
  • Salt and pepper as needed
  • grated parmesan cheese as needed (optional)

Preparation

  1. Bring a large pot of salted water to a boil for the pasta.
  2. In the meantime, finely slice the onion and sauté it in a pan with a drizzle of extra virgin olive oil until it becomes translucent.
  3. Add the speck strips to the pan with the onion and let them brown for a few minutes until crispy.
  4. Lower the heat, add the cooking cream and mix well. Cook on low heat for a few minutes.
  5. When the water boils, cook the pasta until al dente following the instructions on the package.
  6. Drain the pasta and add it to the pan with the speck and cream sauce. Mix well to allow the pasta to absorb the flavors.
  7. If you like, add some pepper and a pinch of salt (be careful with the speck which is already salty).
  8. Serve immediately, with a sprinkle of grated parmesan on top if desired.
