Pasta with speck

Ingredients
- 320 grams of pasta (fusilli, penne, or a short pasta of your choice)
- 150 grams of speck, cut into strips
- 200 ml of cooking cream
- 1 small onion
- Extra virgin olive oil as needed
- Salt and pepper as needed
- grated parmesan cheese as needed (optional)
Preparation
- Bring a large pot of salted water to a boil for the pasta.
- In the meantime, finely slice the onion and sauté it in a pan with a drizzle of extra virgin olive oil until it becomes translucent.
- Add the speck strips to the pan with the onion and let them brown for a few minutes until crispy.
- Lower the heat, add the cooking cream and mix well. Cook on low heat for a few minutes.
- When the water boils, cook the pasta until al dente following the instructions on the package.
- Drain the pasta and add it to the pan with the speck and cream sauce. Mix well to allow the pasta to absorb the flavors.
- If you like, add some pepper and a pinch of salt (be careful with the speck which is already salty).
- Serve immediately, with a sprinkle of grated parmesan on top if desired.
