Pasta with Shrimp

Pasta with shrimp is a simple yet flavorful dish, perfect for a summer meal or a special dinner. Here’s the recipe with an Italian twist.

Ingredients

  • 320 grams of pasta (spaghetti or linguine are great choices)
  • 400 grams of shrimp, peeled and cleaned
  • 2 cloves of garlic
  • 200 grams of cherry tomatoes
  • 1 bunch of fresh parsley
  • 60 ml of extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Red chili pepper (optional)
  • 1 glass of white wine

Preparation

  1. In a large pan, heat the oil and sauté the whole garlic without burning it. If you like, you can add a whole or chopped hot chili pepper to give the dish more zest.

  2. Add the shrimp and sauté for a couple of minutes until they turn pink. Then deglaze with the white wine and let the alcohol evaporate.

  3. Meanwhile, bring a pot of generously salted water to a boil for the pasta.

  4. Add the tomatoes, cut in halves or quarters (according to preference), to the shrimp and cook for about 5-8 minutes. Adjust salt and pepper to taste.

  5. When the water boils, cook the pasta until al dente according to the package instructions.

  6. Drain the pasta and toss it in the pan with the shrimp sauce for one minute, so it absorbs all the flavors.

  7. Sprinkle with chopped fresh parsley before serving.

In Italy, shrimp are often used in seafood cuisine for their sweetness and versatility. It’s important not to overcook them to avoid them becoming too dry and losing their tender consistency. For a richer variant, you can add cream to the sauce, creating a very tempting “rosa” (pink) version.
