Seafood Pasta

Seafood Pasta is a classic of Italian cuisine that celebrates the taste of the sea in a rich and flavorful dish. Here’s how to prepare it.

Ingredients

  • 320 g of pasta, such as spaghetti or linguine
  • 200 g of mussels
  • 200 g of clams
  • 200 g of squid
  • 200 g of shrimp
  • 300 g of cherry tomatoes
  • 2 cloves of garlic
  • 1 bunch of fresh parsley
  • 1 glass of white wine
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chili pepper (optional)

Preparation

  1. Begin by cleaning the seafood: soak the clams in cold salted water for at least an hour, clean the mussels by removing the byssus and rinsing them under running water, cut the squid into rings and clean the shrimp.
  2. In a large pan, sauté the finely chopped garlic (and chili pepper if you wish) in extra virgin olive oil.
  3. Add the squid and let it brown for a few minutes, then deglaze with white wine and let the alcohol evaporate.
  4. Add the halved cherry tomatoes and cook for about 5 minutes, until they start to break down. Season with salt and pepper.
  5. Add the mussels and clams, cover the pan, and cook until they have opened. Remove any that remain closed.
  6. Meanwhile, cook the pasta in plenty of salted water.
  7. A few minutes before the pasta is finished cooking, add the shrimp to the seafood in the pan and cook until they turn pink and opaque.
  8. Drain the pasta al dente and transfer it into the pan with the seafood sauce, letting it flavor for a minute while stirring well.
  9. Sprinkle with chopped fresh parsley and serve immediately.

Curiosity

Seafood Pasta is a dish that lends itself to many variations depending on the availability of fresh seafood at the market. In some Italian regions, a handful of fresh arugula is also added before serving for a spicy and colorful touch.
