Pasta with sea urchin and tomatoes

Pasta with sea urchin and tomatoes is a delicious dish that combines the unique flavor of sea urchins with the freshness of tomatoes. Here’s how to prepare it:

Ingredients

  • 400 grams of long pasta (such as spaghetti or linguine)
  • 150-200 grams of sea urchin pulp
  • 250 grams of cherry or date tomatoes
  • 2 cloves of garlic
  • Chopped fresh parsley, to taste
  • Extra virgin olive oil, to taste
  • Chili pepper (optional)
  • Salt and pepper, to taste

Preparation

  1. Start by bringing a pot of salted water to a boil for the pasta. When it reaches a boil, cook the pasta al dente according to the package instructions.
  2. In the meantime, wash the tomatoes and cut them in half.
  3. Peel the garlic cloves and leave them whole or finely chop them, according to your preference.
  4. In a large skillet, heat a drizzle of extra virgin olive oil and add the garlic (and chili pepper if you like a bit of spice), allowing it to fry slowly to flavor the oil without burning it.
  5. Add the cut tomatoes to the skillet and let them cook for a few minutes until they start to fall apart.
  6. Add the sea urchin pulp and let it gently warm up together with the tomatoes. If the sauce seems too thick, you can add a little pasta cooking water.
  7. When the pasta is al dente, drain it and transfer it to the skillet with the sea urchin and tomato sauce. Stir well to mix the ingredients.
  8. Add the chopped fresh parsley and adjust salt and pepper to taste.
  9. Serve the pasta hot.
