Pasta with Sausage Ragù and Pecorino

Ingredients
- 320 g of pasta (such as rigatoni or penne)
- 400 g of fresh pork sausage
- 1 small onion
- 1 carrot
- 1 stalk of celery
- 400 g of tomato puree
- 100 g of grated Pecorino Romano cheese
- 100 ml of white wine
- Extra virgin olive oil (as needed)
- Salt and pepper (as needed)
- Water for cooking the pasta
- Optional chopped parsley for garnish
Preparation
- Begin by finely chopping the onion, carrot, and celery to prepare a soffritto.
- In a large pan, heat up the extra virgin olive oil and sauté the chopped vegetables until they are soft and golden, about 5 minutes.
- Remove the skin from the sausage and crumble it with the help of a fork.
- Add the crumbled sausage to the soffritto and let it brown well, breaking up any larger pieces with a wooden spoon.
- Once the sausage has taken on color, deglaze with the white wine and let the alcohol evaporate.
- Add the tomato puree, adjust the seasoning with salt and pepper, and let it simmer over low heat for about 30 minutes, until the sauce has thickened. If necessary, add a bit of water to prevent the sauce from drying out too much.
- In the meantime, bring a pot of salted water to a boil and cook the pasta until al dente.
- Drain the pasta and pour it into the pan with the ragù, stirring well for a few minutes so the pasta absorbs the sauce.
- Add a generous handful of grated pecorino cheese and stir again to combine all the ingredients.
- Serve immediately with an additional sprinkle of pecorino and, if you like, some fresh chopped parsley.
