Pasta with Sausage Ragù and Pecorino

Preparation

  1. Begin by finely chopping the onion, carrot, and celery to prepare a soffritto.
  2. In a large pan, heat up the extra virgin olive oil and sauté the chopped vegetables until they are soft and golden, about 5 minutes.
  3. Remove the skin from the sausage and crumble it with the help of a fork.
  4. Add the crumbled sausage to the soffritto and let it brown well, breaking up any larger pieces with a wooden spoon.
  5. Once the sausage has taken on color, deglaze with the white wine and let the alcohol evaporate.
  6. Add the tomato puree, adjust the seasoning with salt and pepper, and let it simmer over low heat for about 30 minutes, until the sauce has thickened. If necessary, add a bit of water to prevent the sauce from drying out too much.
  7. In the meantime, bring a pot of salted water to a boil and cook the pasta until al dente.
  8. Drain the pasta and pour it into the pan with the ragù, stirring well for a few minutes so the pasta absorbs the sauce.
  9. Add a generous handful of grated pecorino cheese and stir again to combine all the ingredients.
  10. Serve immediately with an additional sprinkle of pecorino and, if you like, some fresh chopped parsley.
