  • Chopped fresh parsley (optional)

Preparation

  1. Start by boiling the water for the pasta in a large pot. When the water boils, add salt and then the pasta.

  2. Meanwhile, take the sausage and remove the casing, crumbling it or cutting it into small pieces.

  3. Finely slice the onion and sauté it in a pan with a drizzle of extra virgin olive oil. When the onion becomes translucent, add the sausage.

  4. Brown the sausage until it turns golden, then deglaze with white wine. Allow the alcohol to evaporate.

  5. Pour the tomato sauce into the pan, season with salt and pepper, and cook for about 15-20 minutes on medium-low heat until the sauce thickens. If you like, you can add a pinch of chili pepper.

  6. Once the pasta is cooked al dente, drain it, reserving some of the cooking water, and transfer it to the pan with the sausage sauce.

  7. Add some of the reserved cooking water to bind the pasta to the sauce and toss everything together for about a minute.

  8. Serve the pasta hot, garnishing it with grated Parmesan or Pecorino cheese and chopped parsley if desired.
