Ingredients

  • 320 g of pasta (penne, farfalle, or spaghetti are all fine)
  • 200 g of smoked salmon
  • 2 medium zucchinis
  • 1 small onion
  • 200 ml of cooking cream
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh chives (optional)

Preparation

  1. Start by slicing the zucchinis into thin rounds and finely chopping the onion.
  2. Heat a drizzle of extra virgin olive oil in a large pan and sauté the chopped onion until it becomes translucent.
  3. Add the zucchini rounds and sauté them for about 5-10 minutes, until they start to brown. Season with salt and pepper to taste.
