Pasta with Salmon and Potatoes

Pasta with Salmon and Potatoes is a creamy and very tasty dish. Here’s how to prepare it with an Italian touch:

Ingredients

  • 320 g of pasta (short pasta such as penne or farfalle)
  • 200 g of smoked salmon
  • 2 medium potatoes
  • 1 small onion
  • 200 ml of cooking cream
  • Extra virgin olive oil
  • Salt and black pepper to taste
  • A sprig of fresh dill (optional)
  • Lemon juice (optional)

Preparation

  1. Start by washing the potatoes and cutting them into cubes of about 1 cm. Put them in a pot with salted water and bring to a boil. Cook until they are soft but still firm.

  2. In the meantime, finely slice the onion and fry it in a pan with a drizzle of extra virgin olive oil. As soon as the onion becomes translucent, add the drained potato cubes and let them brown for a few minutes.

  3. Cut the smoked salmon into strips and add it to the pan with the potatoes. Allow the salmon to flavor gently, but be careful not to overcook it to prevent it from drying out.

  4. Deglaze with a little lemon juice if you like the acidity and then pour in the cream. Allow the mixture to warm up and form a smooth cream. Adjust the salt and pepper.

  5. Meanwhile, bring another pot of water to a boil, salt it, and cook the pasta al dente, following the times indicated on the package.

  6. Drain the pasta, reserving some cooking water, and pour it into the pan with the salmon and potato sauce. Mix well and add some cooking water if necessary to maintain the creaminess of the dish.

  7. Serve immediately, garnishing with fresh dill on top and an extra grind of black pepper if desired.
