Ingredients

  • 320 g of pasta (linguine or penne work very well)
  • 200 g of smoked salmon (fresh salmon is also fine, in which case it should be cooked first)
  • 2 leeks (white part only)
  • 200 ml of fresh cream
  • 30 g of butter
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil
  • A glass of white wine (optional)

Preparation

  1. Clean the leeks by removing the outer leaves and the greener part. Wash the leeks and slice them thinly.
  2. Melt the butter in a pan and add the leeks. Let them wilt over medium heat for about 10 minutes. If desired, you can deglaze with a bit of white wine and let it evaporate.
  3. Add the cream to the leeks, season with salt and pepper, and cook for a few minutes until you get a smooth cream.
  4. While waiting, bring a pot of plenty of salted water to a boil and cook the pasta according to the package directions.
  5. Cut the smoked salmon into strips and add it to the leek cream, cooking for a couple of minutes.
  6. Drain the pasta al dente and toss it in the pan with the leek and salmon cream to blend the ingredients.
  7. Serve hot, with a sprinkling of black pepper if desired.
