Pasta with Salmon

Pasta with salmon is a creamy and tasty dish that combines the sweetness of smoked salmon with the creaminess of cream, all enriched with a touch of vodka or brandy to enhance the flavors. Here is the recipe for preparing pasta with salmon:

Ingredients

  • 320 g of pasta (usually tagliatelle or farfalle)
  • 200 g of smoked salmon
  • 200 ml of cooking cream
  • 1/2 cup of vodka or brandy (optional)
  • 1 small onion
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Preparation

  1. Bring a pot of salted water to a boil for the pasta. When the water boils, cook the pasta according to the package instructions, respecting the cooking time to have it al dente.
  2. In the meantime, finely slice the onion and cut the smoked salmon into strips.
  3. In a large pan, heat the extra virgin olive oil and sauté the onion until it becomes translucent.
  4. Add the smoked salmon to the pan and sauté briefly.
  5. Deglaze with the vodka or brandy and allow the alcohol to evaporate for a minute.
  6. Pour the cream into the pan and cook over low heat for a few minutes until the cream begins to thicken slightly. Season with salt and pepper.
  7. Drain the pasta and transfer it to the pan with the salmon sauce, mixing well to blend the flavors.
  8. Serve hot, garnished with chopped parsley if desired.

In some variations of this recipe, peas or asparagus are added to give crispness and freshness to the dish, or you can use fresh salmon instead of smoked, sautéing it briefly before adding the cream. Vodka or brandy are optional but help to enhance the flavor of the salmon.
