Pasta with Robiola Cream, Shrimp, and Zucchini
17/11/2023Here is a delicious pasta recipe with robiola cream, shrimp, and zucchini that combines the delicate flavor of the cheese with the freshness of shrimp and zucchini.
Ingredients
- 320 g of pasta (linguine, spaghetti, or penne are fine)
- 200 g of shelled and cleaned shrimp
- 150 g of robiola (or another creamy spreadable cheese)
- 2 medium zucchinis
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper, to taste
- Fresh chopped parsley, for garnishing (optional)
Preparation
- Begin by bringing a pot of salted water to a boil for the pasta. Cook the pasta according to the package directions until the desired consistency (al dente is perfect).
- Meanwhile, wash the zucchinis and cut them into rounds or cubes, depending on your preference.
- In a large skillet, heat a drizzle of extra virgin olive oil and add the crushed or finely chopped garlic clove. Let it sauté lightly.
- Add the shrimp to the skillet and sauté for a few minutes until they turn pink and slightly golden. Remove them from the skillet and set aside.
- In the same skillet, add the diced zucchini and cook until they are slightly softened but still crisp.
- Remove the garlic clove if you used the crushed one.
- Lower the heat and add the robiola to the zucchini, stirring until the cheese is melted and creamy. If the cream is too thick, you can add a little pasta cooking water to thin it out.
- Drain the pasta al dente, reserving some of the cooking water, and add it to the robiola and zucchini cream. Add the shrimp as well and gently mix to combine the ingredients.
- If necessary, add a bit of the pasta cooking water to achieve the desired sauce consistency.
- Season with salt and pepper and garnish with chopped parsley if you wish to add a touch of color and freshness.
- Serve immediately.
