Crepe Roll with Zucchini

Ingredients

  • For the crepes:
    • 100g of flour
    • 2 eggs
    • 250ml of milk
    • A pinch of salt
  • For the filling:
    • 500g of zucchini
    • 1 small onion
    • 200g of ricotta
    • 50g of grated parmesan cheese
    • Chopped fresh parsley
    • Salt and pepper, to taste
    • Extra virgin olive oil
  • To gratinate:
    • Béchamel sauce (prepared with 30g of butter, 30g of flour, 500ml of milk, salt, and nutmeg)
    • Grated parmesan cheese, to taste

Preparation

  1. Start by preparing the crepes by mixing the flour with the eggs, milk and a pinch of salt until you have a smooth batter. Let it rest for about 30 minutes.
  2. In the meantime, prepare the filling. Dice the zucchini and fry the chopped onion in extra virgin olive oil. Add the zucchini and cook until soft. Allow to cool.
  3. Add the ricotta, grated parmesan cheese, chopped parsley, salt, and pepper to the pan with the zucchini and mix well.
  4. Heat a non-stick pan and, with a ladle, spread some of the batter for the crepes, cooking them one at a time. Make sure they are thin enough.
  5. Once all the crepes are cooked and cool, spread the filling on each and roll them up.
  6. Place the crepe rolls next to each other in an oven dish previously greased with oil or butter.
  7. Prepare the béchamel sauce by melting the butter in a small pot, adding the flour and toasting it slightly, then gradually pouring in the hot milk and continuing to stir to avoid lumps. Season with salt and nutmeg.
  8. Pour the béchamel sauce over the crepes in the dish and sprinkle with more parmesan cheese.
  9. Cook in a preheated oven at 180°C for about 20 minutes or until the surface becomes golden and crispy.
