Preparation
- Start by cleaning the pumpkin, removing the skin and inner seeds, then cut it into small cubes.

- Add the pumpkin cubes to the pan and let them sauté for a few minutes.
- Pour a bit of vegetable broth into the pan and let the pumpkin cook until it softens, adding more broth if necessary.
- Once the pumpkin is soft, mash part of it with a fork to get a cream and leave the remaining pieces whole for a variety of textures.
- Add the gorgonzola cut into pieces and let it melt in the pan with the pumpkin, mixing gently.
- Crumble the amaretti cookies and add them to the sauce, mixing well to blend the flavors.
- Meanwhile, cook the pasta in plenty of salted water following the package instructions for al dente cooking.
- Drain the pasta and transfer it to the pan with the pumpkin and gorgonzola sauce, mix well so that the sauce envelops the pasta.
- Plate the pasta and, if desired, sprinkle with grated Parmesan cheese and a dusting of chopped fresh parsley.
