Pasta with Shrimp and Saffron

Ingredients

  • 320 g of pasta (linguine, spaghetti, or tagliatelle, depending on preference)
  • 200 g of peeled shrimp
  • 1 sachet of powdered saffron or a few threads of whole saffron
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)
  • Fish broth or water (to dilute the saffron)
  • Dry white wine (for deglazing)
  • Cream (optional for a creamier version)

Preparation

  1. Bring a pot of salted water to a boil for the pasta and cook it al dente.
  2. Meanwhile, in a large pan, lightly fry the garlic in extra virgin olive oil and remove it as soon as it’s golden.
  3. Add the shrimp to the pan and briefly sauté them. Season with salt and pepper to taste.
  4. Deglaze with a bit of white wine and let the alcohol evaporate.
  5. In a small bowl, dilute the saffron with some warm fish broth or hot water, then pour it over the shrimp.
  6. Drain the pasta and transfer it to the pan with the shrimp.
  7. Toss the pasta with the shrimp and saffron for a couple of minutes, so the pasta absorbs the flavors.
  8. If a creamier version is desired, add some cream and let the sauce thicken.
  9. Serve immediately, garnishing with chopped parsley for a touch of color and freshness.

There is a variant that includes the use of cream for those who love a creamier consistency, but this is optional. Enjoy your meal!
