Pasta with Shrimp and Cherry Tomatoes

Ingredients
- 320 g of pasta (linguine, spaghetti or tagliatelle are fine)
- 200 g of shrimp, already cleaned
- 250 g of cherry tomatoes
- 2 cloves of garlic
- Chili pepper to taste
- Chopped fresh parsley
- 50 ml of white wine
- Extra virgin olive oil
- Salt and pepper q.s.
Preparation
- Bring a pot of salted water to a boil for the pasta and cook it al dente according to the directions on the package.
- Meanwhile, in a large skillet, heat some extra virgin olive oil and sauté the garlic cloves until they become golden (you can leave them whole to remove later or chop them finely if you prefer to have the pieces in the dish).
- Add the cherry tomatoes, cut in half (or whole if they are small), and cook over medium heat for a few minutes until they begin to soften.
- Add the shrimp to the skillet and cook for about 2-3 minutes per side or until they become pink and opaque. If you like, you can add some chili pepper for a spicy touch.
- Deglaze with the white wine and let the alcohol evaporate over high heat.
- Drain the pasta al dente and pour it into the skillet with the shrimp and cherry tomatoes, mixing to blend the ingredients.
- Turn off the heat, adjust the salt and pepper, and complete with chopped fresh parsley.
- Serve immediately, drizzling the dish with raw extra virgin olive oil.
