Pasta with potatoes and sausage

Pasta with potatoes and sausage is a simple yet flavorful dish, perfect for a comforting dinner. Here’s how to prepare it.

Ingredients

  • 320 g of pasta (e.g., rigatoni or fusilli)
  • 2 pork sausages
  • 2 medium potatoes
  • 1 small onion
  • 500 ml of vegetable broth or water
  • 100 ml of white wine (optional)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Grated Parmesan cheese (optional)
  • A sprig of fresh parsley (optional)

Preparation

  1. Begin by peeling the potatoes and cutting them into not too large cubes. Finely slice the onion.
  2. In a large frying pan or a saucepan, sauté the chopped onion in extra virgin olive oil until it becomes translucent.
  3. Remove the skin from the sausages and crumble them. Add the crumbled sausage to the sauté and let it brown until well golden.
  4. If desired, deglaze with white wine and let it evaporate.
  5. Add the potatoes to the pan along with the sausage and let them flavor for a couple of minutes.
  6. Pour in the vegetable broth or water, adjust with salt and pepper, and let it cook with the lid on at medium heat for about 20 minutes, until the potatoes are tender. If necessary, add more broth or water during cooking.
  7. In the meantime, bring a pot of salted water to a boil and cook the pasta al dente.
  8. Drain the pasta and save some of the cooking water.
  9. Transfer the pasta to the pan with the potato and sausage sauce, mixing well to combine the ingredients. If necessary, add some of the cooking water to make it creamier.
  10. Serve immediately, garnished with grated Parmesan cheese and freshly chopped parsley if desired.

Trivia

In some variants of this dish, pancetta is also used to give a smokier flavor and to further enrich the taste. The recipe can vary greatly from one region to another; for example, in some areas of southern Italy, it is common to add pepperonata for a spicy touch.
