Pasta potatoes and eggs

Ingredients
- 320 g of short pasta (such as ditalini, mixed pasta or fusilli)
- 2 medium-sized potatoes
- 4 eggs
- 1 small onion
- 80 g of grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Extra-virgin olive oil to taste
- (Optional) A sprig of fresh parsley
Preparation

Start by peeling the potatoes and cutting them into small cubes. Peel and finely slice the onion.

Bring a pot of generously salted water to a boil. Add the potatoes and cook them for about 10-15 minutes, or until they soften.

In the meantime, in a large frying pan, sauté the onion with a drizzle of extra-virgin olive oil until it becomes transparent and slightly golden.

Cook the eggs in a pan with boiling water for 8-9 minutes to get hard-boiled eggs. Once ready, cool them under cold water, peel them, and cut them into wedges or pieces.

When the potatoes are almost done, add the pasta to the water and cook according to the timings indicated on the package.

Drain the pasta and potatoes keeping a little of the cooking water; add them to the frying pan with the onion.

Stir carefully, adding a little of the reserved cooking water to keep the mixture soft and creamy.

Finally, add the egg slices and grated Parmesan cheese, and gently combine to not break up the eggs too much. Season with salt and pepper to taste.
