Pasta with Potato Cream and Sausage

Pasta with potato cream and sausage is a rich and flavorful dish, just the way we Italians like it. Here’s how to prepare it:

Ingredients

  • 320 g of pasta (penne, rigatoni, or other short pasta)
  • 2 medium potatoes
  • 200 g of sausage
  • 1 clove of garlic
  • 30 g of grated Parmesan cheese
  • 100 ml of cooking cream (optional for a richer cream)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • A pinch of rosemary or thyme (for flavoring, to your liking)
  • Reserved pasta cooking water as needed

Preparation

  1. Start by peeling the potatoes and cutting them into cubes. Boil them in salted water until they are soft. Once cooked, drain them, reserving some of the cooking water.
  2. In a pan, fry the garlic clove in extra virgin olive oil and, if you like, add rosemary or thyme to flavor. Remove the garlic as soon as it turns golden.
  3. Add the crumbled sausage to the pan and let it brown until it becomes crispy. Remove any excess fat if necessary.
  4. Blend the potatoes with a bit of their cooking water until you get a smooth and homogeneous cream. You can add the cooking cream to make the cream richer.
  5. Put the potato cream in the pan with the sausage and mix well. Season with salt and pepper to taste.
  6. Meanwhile, cook the pasta in plenty of salted water, following the cooking time indicated on the package to achieve al dente pasta.
  7. Drain the pasta and add it to the pan with the potato cream and sausage. Mix well to flavor the pasta, adding a bit of the cooking water if necessary to make the sauce creamier.
  8. Serve the pasta hot with a sprinkling of grated Parmesan cheese.

You could pair this dish with a nice glass of red wine, perhaps a Montepulciano d’Abruzzo or a Chianti, which perfectly complement the intense taste of the sausage.
